The weather has finally turned in northern California. We had three days of rain and that brought the temperature down and it looks like it’s going to stay down. That’s got me thinking of soup.
Soup is one of my go-to meals since I can double the recipe and have containers of soup in the freezer. I like having food ready-to-go so I don’t have daily food prep and cooking to do. Soup is filling, healthy, and so yummy.
Today I was pondering which soup recipe I wanted to make. And then I thought why not go to some of my favorite vegan sites and see what I can find to add to my collection… and share them with you!
10-Spice Vegetable Soup
Let’s start off with 10-Spice Vegetable Soup from “oh she glows.” Not only did the title of the soup attract me, but when I went to the page, she talks about substituting real tomatoes for canned tomatoes. Right there I’m gonna try the recipe because I won’t buy tomatoes in a can anymore due to the toxic chemicals.
So here you have a new soup recipe and a “how to” on using fresh tomatoes to replace the canned version!
Creamy Vegan Potato Leek Soup
I’ve don’t make any creamy soups, unless you count using an immersion blender to get the creamy texture. Who wouldn’t love to try this Creamy Vegan Potato Leek Soup on a cold or rainy day! From The Full Helping…
Glowing Spiced Lentil Soup
Here’s another interesting soup recipe from “oh she glows.” This caught my eye because I love lentils and although I use them a lot in soup, I’m always looking for new recipes. Look at the color – you know it’s going to have an interesting mix of spices, hence the recipe title of Glowing Spiced Lentil Soup. I can hardly wait to try it!
Vegan White Bean & Roasted Butternut Squash Soup
I prefer my soup with a lot of things to chew, so at first this Vegan White Bean & Roasted Butternut Squash Soup didn’t really interest me. Then I read the inspiration behind the recipe and her trial run before working out the details of the recipe. I was hooked. From Ambitious Kitchen…
Korean Ramen Noodle Soup
A spicy soup with noodles, mushrooms, carrots, and miso topped with scallions. This Korean Ramen Noodle Soup looks very interesting and sure to keep me warm on a chilly night. I haven’t made a Korean soup before, so this will be fun. From Peaceful Dumpling…
West African Peanut Soup
I love peanuts, so this recipe certainly caught my attention. Then I read the opening of “peanut butter, tomatoes and collard greens” and knew I had to make it. I have a feeling this West African Peanut Soup from COOKIE + Kate may be addictive for me!
What about you? Do you make a lot of soups or are they something you seldom eat? Do any of these recipes appeal to you?
P.S. I can’t wait to try all of these recipes. I don’t know why, but since going vegan, I have fallen in love with soup!
