Once fall arrives I start craving pumpkin and sweet potatoes. I don’t like preparing raw pumpkins, so I use sweet potatoes instead. They’re easy to clean and cut and just the right size to use in a raw smoothie.
I prefer to use raw, but roasted (unsalted) nuts and seeds are fine. And when I use flaxseeds, I prefer to use the whole seeds.
If you have a Vitamix blender, you don’t have to worry about peeling the sweet potatoes or the apple. The peel will blend up smoothly so you don’t even know it’s in the smoothie. That means your body will get all the vitamins and nutrients without leaving anything out.
You don’t need any additional sweetener in this recipe. The apple and the banana add all the sweetness you need for the sweet potato.
This recipe will make one large bowl or two small bowls. You can add as much of the toppings as you like if you prefer more chew to your bowl.
Raw Sweet Potato Smoothie Bowl
1 medium Sweet Potato, diced
1 medium sweet Apple, diced
1-2 tablespoons Nut Milk
1/2 teaspoon Pumpkin Pie Spice
whole Pumpkin Seeds
sliced Apple, Pear, or Banana
1) Add sweet potatoes to the blender (Vitamix gives the best texture). Use the tamper to push down the sweet potatoes at the lowest speed. Keep blending until you achieve an almost smooth texture.
2) Add the apple, banana, one tablespoon of nut milk, and spice. Blend using the lowest speed with the tamper. Increase the speed until you don’t need to use the tamper any more. If you can’t do this, add the remainder of the nut milk. Increase the speed until you can use the high speed switch – blend for 30 seconds.
3) Pour mixture into a bowl and top with one or more of the toppings.
Cut the sweet potato into large chunks and place in the blender.
Cut the apple into large chunks and reserve
Insert the tamper into the Vitamix and start the machine on low. Use the tamper to
push the sweet potatoes into the blades to keep the mixture moving.
Add the apple, banana, 1 tablespoon of nut milk, and spice and keep tampering the mixture.
Blend using the lowest speed with the tamper. Increase the speed until you don’t need to use
the tamper any more. If you can’t do this, add the remainder of the nut milk. Increase the speed
until you can use the high speed switch – blend for 30 seconds.
The sweet potato mixture should not have any lumps at this point. Pour and enjoy!
I don’t see much difference between pumpkin and sweet potatoes, making them pretty much interchangeable. Which do you prefer?
P.S. Did you know… there are no removable parts to a Vitamix blender. Once you’re done, you can fill it with warm water, add a little soap, and blend to clean the blades. This makes it so easy knowing you don’t have to reassemble the unit. That’s one reason I hardly ever used my food processor – t was way more cleanup to wash all the parts!
